The chef's idea of cooking comes from the basic concepts of tradition and innovation; his skillful use of seasonal products and constant search for new inspirations are his "tools" which guide him as he recreates, for the pleasure of your eyes and palate, fine regional cuisine.

I like to learn, understand, compare and amaze... this is why I continually create situations which allow me to come into contact with something new.

I am eternally curious. I love learning and marveling at all that I haven't discovered yet... humble but determined with the right touch of madness that never hurts...
